Moi Moi Containers

  • Aluminium foil or
  • Plastic Bowls or
  • Uma Leaves (Thaumatococcus Daniellii)- For this Preparation we used this.
  • Jacket Moi Moi
  • Small Nylon Bags

The Filling: For the filling, If you intend using fish, Remove the bones, Shred and set aside. If you intend Using Eggs, Boil & slice into two or four and set aside. If you intend Using Marrow bones, Season well, Boil and set aside (Without the stock). You can be as generous as you want to be with any filling you intend using.

Ingredients

  • White Beans  or Brown
  • Bell Pepper
  • Scotch Bonnet (Rodeo)
  • Onions
  • Crayfish
  • Eggs
  • Seasoning Cubes
  • Salt to taste
  • • ½ Cup Vegetable oil
  • Paprika (Shombo)

METHOD

  1. Blend peeled beans, peppers and onions in a blender to smooth and loose paste. (Don’t add too much water)
  2. Pour the beans into a mixing bowl
  3. Add in the chopped onions, salt, and Onga Classic powder. Stir well
  4. Add vegetable oil or palm oil (heat up the palm oil/vegetable oil for 2-3 minute on a medium heat before adding to the mix).
  5. Stir for another 3-5 minutes till well combined
  6. Set a large pot on medium heat, set the base of the pot with the moi moi leaf stalks
  7. Using your ladle spoon, scoop in your beans batter in the leaf cone and wrap up the leaf
  8. Place in pot and repeat till the batter is finished
  9. Cook for about 30-40 minutes
  10. Check from time to time and add water accordingly
