Yam porridge is one of the most widely served meal in Nigeria being that its simple and easy to prepare.

Below are the ingredients and steps towards cooking your own yam porridge

Ingredients

  • 1 kg (2.2 lbs) white puna yam
  • Red palm Oil (to colour)
  • 1 smoked fish (mackerel)
  • 1 tablespoon ground crayfish
  • medium sized onion
  • Fresh green vegetable (eg pumpkin, parsley, scent leaf or green amaranth)
  • Habanero or Chilli Pepper & Salt (to taste)
  • 2 big stock cubes

Preparation

  1. Peel and cut the yam into desired cube sizes, wash and place in a pot
  2. Wash and cut the onion and vegetables into tiny pieces.
  3. Grind the pepper and debone the smoked fish.
  4. Add enough water to cover the yam cubes and cook at a medium heat.
  5. When the yam starts boiling, add the grounded crayfish, habanero pepper, onion, stock cubes, and palm oil.
  6. Add salt and continue cooking until the yam is soft as desired.
  7. When the yam is cooked, add the vegetable and stir very well with a wooden spoon until the liquid thickens. Then serve.
